1 heaping tablespoon grated orange zest
1/2 cup plus 2 tablespoons orange juice
2 tablespoons white miso paste
1 tablespoon minced fresh ginger
1 clove garlic, minced
2 tablespoons soy sauce
1/2 cup rice bran oil or light cooking oil
2 teaspoons honey
1 tablespoon rice vingegar
For the salad:
1 to 2 tablespoons cooking oil
2 skinless salmon fillets (4 to 6 ounces each)
Salt and pepper
5 ounces fresh baby spinach
Sweet onion slices (Vidalia recommended)
1 orange peeled and sliced
Toasted pine nuts (about 1 tablespoon)
