1 pound ground pork
1 cup panko breadcrumbs
1 onion, minced
2 cloves garlic, minced
A few tablespoons parsley, minced
A few tablespoons fresh thyme, minced
1 tablespoon Dijon or stone-ground mustard
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 teaspoon salt
1/2 teaspoon pepper

For the egg wash:

1 tablespoon water
1 egg, lightly beaten
