Stir-fried Bitter Melon with Black Bean Sauce

Black Bean Sauce:
1 teaspoon garlic, minced
1 teaspoon ginger, minced
2 tablespoons black bean and garlic sauce (I used Dynasty brand)- *May substitute 3 tablespoons whole fermented black beans, rinsed then mashed
2 dried red chilies, seeded and chopped
1 tablespoon rice wine (I used Mirin)
1 teaspoon soy sauce
¼ teaspoon salt
1 tablespoon granulated sugar
¼ cup water
Slurry- 2 teaspoons cornstarch, plus ¼ cup cold water, mixed together
1 pound pork loin, sliced thin against the grain, 2 inch strips
2 teaspoons soy sauce
2 teaspoons cornstarch
1 teaspoon granulated sugar
2 teaspoon rice wine (I used Mirin)
2 slices ginger root
2 tablespoons vegetable oil
Vegetable Stir-Fry:
2 cups bitter melon, cut in half lengthwise, seeds and membrane removed, cut into 1/4 inch slices
½ cup red bell peppers cut into 2-inch strips
½ cup yellow bell pepper, cut into 2-inch strips
1 cup white mushrooms, sliced
½ cup yellow onions, sliced into 2-inch slices
2 tablespoons vegetable oil
