200g chopped toasted hazelnuts
800g graham crackers or digestive biscuits
125 g melted butter

Baked Coffee Cheesecake:
2 x 300g (8 oz) cream cheese at room temperature
2 eggs at room temperature
1 cup brown sugar
0.25 cup full cream
0.25 espresso or strong coffee
0.75 tablespoon vanilla extract
2 tablespoons flour
pinch of salt

Dark Chocolate Ganache:
200g dark chocolate (50 – 70%)
200ml full cream
0.5 teaspoon vanilla extract
