Blue Cheese Tuna Melt



⅓ cup diced green onions
⅓ cup diced celery
⅓ cup diced red bell pepper
2 5 ounce cans tuna (in water, drained)
¼ cup low-fat mayo
⅛ cup blue cheese crumbles
salt and pepper to taste
8 pieces of bread (if making open-faced sandwiches, only 4 slices are needed)
8 ounces shredded American cheese (or 4 slices of American cheese)
