Chocolate Cupcakes with Peanut Butter Cookie Frosting

Ingredients:

For the cupcakes:
¾ cup hot coffee (I dissolved 1 Tbsp instant coffee ¾ cup of water)
½ cup unsweetened cocoa powder
1 cup all-purpose flour
¾ tsp baking soda
½ tsp baking powder
¼ tsp salt
6 Tbsp unsalted butter, softened
¾ cup packed brown sugar
½ cup sugar
2 large eggs
2 tsp vanilla extract
For the ganache:
3 oz bittersweet chocolate, finely chopped
¼ cup heavy cream
For the peanut butter “cookies”:
¼ cup (4 Tbsp) unsalted butter, softened
¾ cup creamy peanut butter
1 ¼ cups confectioners’ sugar
