Preheat the oven to 325 degrees F.
Roll out the pie dough into 12 round circles and place into a tart baking tray. Bake for 15 minutes and let cool.
Whip the cream cheese, sugar, and vanilla in a large bowl until smooth. Pipe the mixture into the tart crust.
Garnish with the array of fruit.
