Directions
1 Preheat a nonstick skillet or electric griddle over medium heat (375°F). Heat slices of bacon for 6-7 minutes or until desired crispness, turning frequently. Chop; set aside. Always cook to well-done, 165°F as measured by a meat thermometer.
2 In large saucepan over medium high heat, cook potatoes in salted water 20 minutes or until tender; drain. Return potatoes to same pan.
3 Add butter and sour cream. Mash potatoes until smooth and creamy.
4 Stir in cheese, onions and half the bacon. Sprinkle top with remaining bacon.
