Mini bell peppers are ideal for stuffing, as they cook faster than their larger counterparts. Regular-sized peppers may still be used if desired; just increase their cooking time accordingly.

To prepare the filling, begin by removing seeds and membranes from peppers. Cut each one in half lengthwise from stem to base before roasting both halves until tender-crisp.

While your peppers are cooling, combine ground bison, grated cauliflower, rotel, seasonings and half of the cheese into a meat mixture and stuff each pepper with it before topping with remaining cheese for garnish.

Serve these peppers hot, or refrigerate until ready to reheat later on.

Make and store the filling ahead of time in an airtight container in the fridge for up to 2 days; for best results reheat leftovers in a 350 degF-oven until warm and the cheese has melted.

To avoid sogginess in your peppers, don’t overbake them; and, if using fresh peppers, add water to the bottom of your baking dish before starting so as to add moisture while baking and help ensure they won’t become dry during their journey to you!

Pasta with Parmesan Cheese

Grated Parmesan cheese is an integral part of Italian cuisine, yet knowing when and how much to add can be tricky. Too much cheese could overwhelm the flavors in your dish while too little can leave it tasting bland.

Italians tend not to add more than one or two teaspoons of cheese per serving of pasta, as too much cheese may overshadow other elements in the dish such as meat, sauce and vegetables.

This recipe calls for freshly grated Parmesan cheese, which offers superior flavor over pre-grated varieties that tend to be dry and grainy. Furthermore, freshly grated Parmesan can also save families money; which makes this an especially helpful budget friendly solution.

Use any pasta you desire for this dish; I suggest linguine, fettuccine or spaghetti as they cook more quickly than others. Be sure to follow the directions on the box when boiling your chosen variety!

Once the pasta is done cooking, drain and transfer it to a large bowl. Gently incorporate butter, garlic and olive oil (photos 1&3) before tossing to combine; you may want to splash in some pasta water as you toss for added creaminess.

Once the pasta has been mixed with sauce, add Parmesan cheese. Top off your dish with fresh chopped parsley for a garnish, and you have an irresistibly flavorful and nutritious dinner for everyone in one pot! It’s great that families can share one meal that everyone will love!
